Admission Criteria
The program will start in October 2024.
Applicants must go through the following stages:
- Online registration
- Interview
- Testing
Registration
To enroll in the program, it is required to fill out the electronic registration form through September 1st.
Fee
The total fee of the program is 4800 GEL. Before the start of the program - 2000 GEL, at the 2nd stage - 2000 GEL, at the 3rd stage - 800 GEL.
Duration and Schedule
The duration of the program is approximately 1 year. Lectures are held three times a week:
- Twice on weekdays from 19:00
- Saturdays from 10:00 to 17:30
Program Description
The Free University of Tbilisi Business School (ESM), the Agricultural University of Georgia's School of Natural Sciences and Biotechnology and its Culinary Academy in close partnership with the private sector have developed a certificate program - Culinary and Restaurant Management.
The purpose of the program is to provide the student with interdisciplinary knowledge, both in the direction of restaurant management and cooking, which ensures a holistic understanding of the processes taking place in the catering facility and, as a result, an increase in the efficiency of the operation of restaurants and cafes.
The program is intended for those who:
- Already employed in the food service sector or interested in working in this field, including working chef or brand chef.
- Owns and/or manages food establishments and wants to expand and further develop this business.
- Is interested in opening a catering facility or has a consulting business in the field of catering services and wants to update his knowledge.
The program has been reviewed by EHL Advisory Services, which is the advisory service of EHL Hospitality Business School. EHL was founded in 1873 as the Ecole Hôtelière de Lausanne and is the world's leading university in hospitality. EHL has been ranked first among international universities in hospitality management for the past 4 years according to the QS World University Rankings.
The implementation of the project became possible as a result of the assistance provided by the United States Agency for International Development - USAID, in particular within the framework of cooperation with the USAID Industry-Led Skills Development Program.
Subjects
The program includes 5 modules: Introductory Module, Management Module, Financial Module, Culinary Module and Food Safety Module. Each module represents a group of interrelated subjects.
- The Introductory Module covers the basics of mathematics and computer skills.
- The Management Module covers subjects such as: foundations of business, management fundamentals, human resource management, marketing, operations management, conflict management.
- The Financial Module covers such subjects as: financial accounting, finances.
- The Culinary Module covers subjects such as: menu engineering and kitchen planning, cooking technology and world cuisine, beverages and bar, wine history and tasting, calculus.
- The Food Safety Module covers such subjects as: food safety, HACCP training, fundamentals of nutrition.
In the event that a student fails to receive a passing grade in any subject, he/she will be given the opportunity to retake the final exam. If the student does not get a positive grade even in case of retesting, then he/she ceases enrollment.
Certificate
After successful completion of the program, graduates will receive joint certificate from the Agricultural University of Georgia, the Culinary Academy of Georgia and the Free University of Tbilisi.
To obtain a certificate, it is necessary to:
- Achieve a passing grade in each subject.
- Prepare and present the final project.
